It is finally warming up here. The trees have budded and the lily of the valleys are poking their little bells up through the leaves. I am craving raw food instead of cooked food (yes, it changes with the seasons). Blackberries were on sale at my local market and I bought a couple of boxes! Blackberries go beautifully with walnuts but what really makes this salad is the Lime Ginger Vinaigrette with Shallot. It balances out the flavors beautifully and is is literally bursting with spring time flavor.
Blackberry Walnut Salad with Lime Ginger Vinaigrette
Vinaigrette
- 2 limes, juice and zest from (aprox 1/2 cup juice and 2 teaspoons zest)
- 3 teaspoons finely chopped shallots
- 1 1/2 teaspoon grated ginger
- 1/4 cup olive oil
- 2 tablespoon agave or raw honey
- Himalayan salt and pepper to taste
1. Whisk all ingredients together.
Salad
- 1 cup blackberries
- 4 cups lettuce
- 1/2 cup walnuts
1. Toss all ingredients together. Top with vinaigrette to taste.
*Serves 2. You will have leftover vinaigrette.

Lovely salad. I’m moving into the season of salad myself. I WILL be trying this. I love all of the ingredients. I think I spied out some wild blackberry vines a few days ago. Those berries will be ripe soon.

this looks great, most of the time my salad dressing is simply lime juice and olive oil, but I add fresh herbs like basil too sometimes. lately though I’ve been throwing in a bit of finely chopped ginger, it’s excellent…

OMG, this was so delicious I could hardly stand it. The dressing is about the best I have ever tasted. I was so full afterwards. Every mouthful was like MMM, MMMM, MMMMMM. This is going on my list of favourite salads.
