<p style="text-align: center;"><strong>Cinnamon and Fruit Chia Pudding</strong></p>
<p>Cashew Cream:</p>
<ul>
<li>2 cups cashews, soaked overnight in the refrigerator</li>
<li>2 cups water, filtered</li>
</ul>
<p>1. Drain and rinse cashews.</p>
<p>2. Combine with filtered water in blender (I used a high speed blender) and blend until smooth.</p>
<p>3. Refrigerate</p>
<p>Pudding</p>
<ul>
<li>1 3/4 cups cashew cream</li>
<li>1/2 cup chia seeds</li>
<li>1/2 cup agave</li>
<li>1 teaspoon vanilla</li>
<li>1 teaspoon cinnamon</li>
<li>1 cup strawberries, sliced</li>
<li>1 cup blueberries</li>
</ul>
<p>1. Mix together cashew cream, chia seeds, agave, vanilla and cinnamon. Set aside.</p>
<p>2. Slice strawberries.</p>
<p>3. When chia pudding has thickened up (about 5-10 minutes) stir in sliced strawberries and blueberries.</p>
<p>4. Keep refrigerated.</p>
<p>Makes 4 servings.</p>

For mother&#8217;s day, I decided to make create a raw food recipe for my favorite pancakes, banana pecan! They are amazingly filling, and will satisfy the desire for a special Sunday morning breakfast.</p>

<p style="text-align: center;"><strong>Banana Pecan Pancakes</strong></p>
<ul>
<li style="text-align: left;">1 1/2 C Ground Flax<strong> </strong></li>
<li style="text-align: left;">1/2 C Flax Seeds</li>
<li style="text-align: left;">1/2 C Dried Coconut</li>
<li style="text-align: left;">3/4 C Water</li>
<li style="text-align: left;">1/4 C Agave or Maple Syrup</li>
<li style="text-align: left;">1/4 C Coconut Butter</li>
<li style="text-align: left;">1 C Sliced Bananas</li>
<li style="text-align: left;">3/4 C Chopped Pecans</li>
</ul>
<p style="text-align: left;">Mix all ingredients together. You might want to get in there with your hands. Shape into pancake sized patties. Place on dehydrator shelf with screen. Dehydrate at 140 for 30 minutes, then 116 for another 30 minutes. These should still be moist.</p>

That was a few years ago. Today, I decided to revisit the concept and wanting something that really reminded me of a cinnamon doughnut hole, threw together this quick version. Made with Brazil nuts for a base, some oat flour, flaked oats and coconut oil, a quick roll in cinnamon and sucanant gives a great tasting treat.</p>
<p>Brazil nuts are nutrient dense. They are full of protein, copper, niacin, magnesium, fiber, vitamin E          and selenium. Selenium is a powerful antioxidant that          works to neutralize dangerous free radicals. Sucanant is a unrefined sugar cane juice. It is made by heating, so not considered raw, but like maple syrup, is not processed.</p>

<ul>
<li>2 C Brazil Nuts</li>
<li>1/2 C Oat Flour (made from raw oats)</li>
<li>1 C Flaked Oats (raw)</li>
<li>1/3 C Coconut Oil</li>
<li>1/3 C Maple Syrup (not raw but used in raw food recipes)</li>
</ul>
<p>Chop Brazil nuts in food processor until fine. Combine dry ingredients in a bowl. Combine wet ingredients, mix together and then add to the wet ingredients. Stir. Squeeze into balls. Roll in sucanant cinnamon mixture and refrigerate.</p>
<p>Topping:</p>
<ul>
<li>1/3 C Sucanat (not raw but not processed, used in raw recipes)</li>
<li>1 1/2 t. Cinnamon</li>
</ul>
<p>Combine and put through blender. I use a coffee grinder for this to break up the grainy sucanant. You can skip this step and just combine the ingredients.</p>

Wanting to get away from only using cashews for cream fillings, I also added almonds and raisins. The crowning glory is the maple cashew icing! I wouldn&#8217;t suggest having these for breakfast every morning, but for a Sunday brunch, or a weekend treat, they are perfect.</p>

It is high in B vitamins, iron and potassium. I got this raw, flaked spelt from Sunrise Flour Mills. You can read more about them <a href="http://www.rawmazing.com/articles/raw-food-amazing-grain/" target="_blank">here</a>. You can replace it with raw, flaked oats if you wish. But you know me, I like to mix it up a bit!</p>

<p style="text-align: center;"><strong>Raw Cinnamon Buns</strong></p>
<p style="text-align: left;"><strong>Buns:</strong></p>
<ul style="text-align: left;">
<li>5 dates</li>
<li>1/4 C Water</li>
<li>1 C Ground Flax</li>
<li>1 1/4 C Almond Flour</li>
<li>1 C Spelt Flakes</li>
<li>1 C Chopped Pecans (chopped fine)</li>
<li>2 t. Cinnamon</li>
<li>3 T. Olive Oil</li>
<li>1/4 C Agave</li>
<li>1 C Water</li>
</ul>
<p style="text-align: left;">Soak dates. Blend with 1/4 C water to make a smooth date paste. Set aside.</p>
<p style="text-align: left;">Combine flax, almond flour (I use the dehydrated almond pulp left over from making almond milk), finely chopped pecans, and Spelt flakes. In a separate bowl, combine date paste, olive oil, 1/4 C agave and 1 C water. Mix wet ingredients into dry. Spread in a rectangle on a non-stick dehydrator sheet. You want this to be a little less than 1/2 inch thick. Dehydrate for 30 minutes. Flip onto screen, peel off dehydrator sheet and dehydrate for another 20 minutes. While the bun is dehydrating, you will want to prepare the filling.</p>
<p style="text-align: left;"><strong>Filling:</strong></p>
<ul style="text-align: left;">
<li>1 Young Thai Coconut (the white part)</li>
<li>1 C Cashews</li>
<li>1/2 C Almonds</li>
<li>1/4 C Raw Agave</li>
<li>1 T Vanilla (not raw)</li>
<li>1/2 C raisins</li>
</ul>
<p style="text-align: left;">Soak Almonds and Cashews for at least 3 hours to soften. Place in food processor with remaining ingredients except raisins, process until smooth. Stir in raisins.</p>
<p style="text-align: left;">Assembly:</p>
<p style="text-align: left;">Place &#8220;bun&#8221; on parchment paper. Spread filling on bun. You can spread to the edges on the long sides but leave an inch or two on the short sides. Gentley roll up the roll. Slice and top with icing. Makes 12.</p>
<p style="text-align: left;"><strong>Icing:</strong></p>
<ul style="text-align: left;">
<li style="text-align: left;">1 C Raw Cashew Butter</li>
<li style="text-align: left;">3 T Maple Syrup (not raw)</li>
<li style="text-align: left;">1 t. Cinnamon</li>
<li style="text-align: left;">3-4 T Water</li>
</ul>
<p style="text-align: left;">Mix all ingredients except water. Add water 1 T at a time to desired consistency.</p>

<p>Need some quick raw food energy to get moving in the morning? Or a fast raw food afternoon pick me up? These bars are the perfect thing for that. Tasty, sweet and made with super healthy ingredients, they not only satisfy your hunger, they provide easily accessible, high nutrient energy to get or keep you going.</p>
<p>Almonds, pumpkin seeds and flax seeds make up the bulk of the recipe. With added goji berries, and cacao nibs, these bars really pack a punch.</p>
<p>We know about the benefits of almonds. They are high in protein, zinc and calcium. Almonds are also a great source of  vitamin E magnesium, calcium, potassium and iron. But did you know that pumpkin seeds are nutritional power houses? Considered a super food, Pumpkin seeds are full of magnesium, which keeps bones strong, promotes healthy heart  function and supports your nervous system&#8217;s function, B vitamins, and  are packed with protein! They are also a good source of iron, zinc and  fiber!</p>
<p>Golden flax seeds contain 27 cancer preventing substances while also giving you a good dose of omega 3&#8242;s, which are great in the battle against heart disease. Goji berries are high in protein, amino acids and are packed with antioxidants. Cacao nibs are partially ground cacao beans, which are the beans that chocolate comes from. Cacao is full of antioxidants and trace minerals and will give you a little pick me up, too!</p>

<p style="text-align: center;"><strong>Raw Goji Cacao Energy Bars</strong></p>
<ul>
<li style="text-align: left;">1 C Almonds, soaked</li>
<li style="text-align: left;">1 C Pumpkin Seeds, soaked</li>
<li style="text-align: left;">1 C Flax Seeds, soaked in 1 1/2 C water</li>
<li style="text-align: left;">1/3 C Agave</li>
<li style="text-align: left;">1 T Cinnamon</li>
<li style="text-align: left;">1/2 C Goji Berries</li>
<li style="text-align: left;">1/2 C Cacao Nibs</li>
</ul>
<p>1. Soak almonds, pumpkin seeds and flax seeds for at least 6 hours. Drain almonds and pumpkin seeds.</p>
<p>2. Place almonds and pumpkin seeds in food processor. Process until well ground but still chunky.</p>
<p>3. Add agave and cinnamon, pulse until well combined.</p>
<p>4. Remove from food processor and place large bowl. Add flax seeds, cacao nibs and goji berries, stir.</p>
<p>5. Press into a rectangle on non-stick dehydrator sheet. You want these to be 1/2&#8243; thick.</p>
<p>6. Dehydrate at 145 for 45 minutes. Reduce heat and dehydrate for 3 more hours.</p>
<p>7. Peel off dehydrator sheet, dehydrate for 2 more hours. At this point, you will remove them from the dehydrator, cut into bars, separate so there is a little space in between each bar and return to dehydrator for 2-3 more hours. You want them dry but not brittle. They should be a little soft.</p>
<p>8. Top with raw chocolate.</p>
<p><strong>Raw Chocolate:</strong></p>
<ul>
<li>1 C Raw Cacao Butter</li>
<li>1 t. Vanilla</li>
<li>3 T Coconut Oil</li>
<li>1/3 C Powdered Sucanat (finely ground in   coffee grinder)</li>
<li>2 T Agave</li>
<li>7 oz. Cacao Powder</li>
</ul>
<p>Melt cacao butter and coconut oil in   dehydrator or over hot water. In food processor, combine melted cacao   butter, coconut oil and vanilla. Remove 1/2 mixture and set aside. Add   1/2 cacao powder and combine. Add sucanant and combine. Add coconut   butter that was set aside and combine. Add remaining cacao powder, mix  well. It should be quite liquid at this point. It will harden as it  cools.</p>
<p>Makes two dozen, 1&#8243; x 3 bars</p>

<p>Walnuts are considered to be one of the healthiest nuts available to us. They are loaded with omega 3&#8242;s. More benefits include protection of your cardiovascular system, support of your cognitive function, and immune system. They are anti-inflammatory, and also have many cancer preventing properties.</p>

<p style="text-align: center;"><strong>Cranberry Walnut Crackers</strong></p>
<ul>
<li style="text-align: left;">4 C Walnuts (soaked overnight)</li>
<li style="text-align: left;">1 C Ground Flax</li>
<li style="text-align: left;">2 C Fresh Cranberries Coarsely Chopped</li>
<li style="text-align: left;">1 C Orange Juice (from fresh oranges)</li>
<li style="text-align: left;">1/4 C  Agave</li>
</ul>
<p style="text-align: left;">Place roughly chopped cranberries in bag with orange juice and 1/4 C raw agave. Marinate for 2 hours. Place walnuts in food processor. Process until finely chopped. Add cranberries, agave and orange juice and pulse until cranberries are well combined. Add flax and pulse until combined. Spread on non-stick sheets about 1/4 inch. Score. Dehydrate at 145 for 45 minutes then 116 for 3 hours. Peel off sheets and continue to dry until done. (6-8 more hours).</p>
<p style="text-align: center;"><strong>Cranberry Orange Spread</strong></p>
<ul>
<li style="text-align: left;">1 Orange, juice and zest</li>
<li style="text-align: left;">1/2 C flesh from young coconut</li>
<li style="text-align: left;">1 C Cashews, soaked for 6 hours, drained</li>
<li style="text-align: left;">3 T Agave</li>
<li style="text-align: left;">1 C Fresh Cranberries</li>
</ul>
<p style="text-align: left;">Place cranberries in processor and coarsely chop. Remove from processor and set aside. Place cashews, coconut flesh, orange juice, orange zest and agave in food processor. Process until very blended. Remove and stir in chopped cranberries. Makes about 2 cups.</p>

Now that it is November, I find myself wanting a little more than a green drink for breakfast on some days. The perfect solution? Flaked Oats! High in soluble and insoluble fiber, oats are know to reduce blood cholesterol. They can also help regulate blood sugar, aid in digestion and because they contain phytochemicals, they help reduce your cancer risk. Studies have also shown that they also help control blood pressure and are an excellent source of energy giving carbohydrates.</p>
<p>Now that I have found a great source for organic, flaked oats that I can actually use in a raw food recipe, I have put my occasional raw oatmeal back on the menu! This takes a little advanced preparation, and you will be using the dehydrator so plan accordingly. I normally make them right when I get up. They will be ready when you are done showering!</p>

<p style="text-align: center;"><strong>Raw Oatmeal with Goji Berries</strong></p>
<ul>
<li style="text-align: left;">1 C Flaked Oats</li>
<li style="text-align: left;">1/2 to 1 C Almond Milk</li>
<li style="text-align: left;">1/4 C Goji Berries</li>
<li style="text-align: left;">1/4 C Chopped Almonds</li>
<li style="text-align: left;">Agave  or Maple Syrup* to taste.</li>
</ul>
<p style="text-align: left;">Place oats in glass bowl. Cover with almond milk. Stir in goji berries. Place in dehydrator at 145 (the food won&#8217;t heat above 116) for 30 minutes, reduce temp and continue for another 1/2 hour. You can also start soaking the oats the night before and then gently warm in the dehydrator. Top with walnuts and sweeten to taste.</p>

<p>You are looking at a very easy way to incorporate one of the the most overlooked, necessary elements of our diet, greens. Quick, simple and packed with nutrition, green drinks are a quick way to incorporate more raw into your diet. Drink your spinach. I do almost every morning.</p>
<p>Preparing this drink in class is always fun. I love the look on people&#8217;s faces, as I toss two huge handfuls of spinach into the vitamix.  We are going to drink that? Add a banana, a few dates and some cacao and you have a delicious, very nutritious drink that amazes everyone.</p>
<p>Spinach is very low in calories but packs a nutritional punch. It is a rich source of calcium, iron, and even protein. It&#8217;s amino acid score is 119 indicating a good source of complete protein. In fact, spinach is almost half protein!</p>
<p>The addition of Cacao provides more amazing benefits. Cacao is so loaded with anti-oxidants, vitamins and minerals, and provides many benefits. It is a form of raw chocolate so if you are sensitive to chocolate use in moderation.</p>
<p>Whip this up for breakfast, lunch or when ever you need a bit of a boost. Just don&#8217;t tell people what is in it!</p>

<p style="text-align: center;">5 ice cubes</p>
<p style="text-align: center;">Place all ingredients in blender. Add more or less water according to how thick you like it. You can also add chia seeds, maca powder or any other nutritional additions you may like.</p>

<p>Sunday mornings have always been a special time for my daughters and I. The luxury of being able to sleep in  and rising to make a big breakfast was the traditional way we celebrated. My girls are now living in Colorado and Sundays seem to beckon to me in a completely different way, but I still find myself craving that day&#8217;s  tradition of a special breakfast. With that as my inspiration, I threw together a few things and came up with these yummy blueberry flax pancakes. They do take a couple of hours in the dehydrator so plan ahead just a little.</p>

<p style="text-align: center;"><strong>Blueberry Flax Pancakes</strong></p>
<ul>
<li>1/2 C flax seeds (ground)</li>
<li> 1 C flax seeds (not ground)</li>
<li> 3 T coconut oil melted</li>
<li> 1/4 C agave</li>
<li> 1/2 C water</li>
<li> 1 C blueberries</li>
<li> 1/4 C coconut (unsweetened, dried)</li>
</ul>
<p>Mix all ingredients. Dehydrate at 145 for one hour, flip and then dehydrate for 30 minutes at 114. Makes 5, 5&#8243; pancakes. These are very filling!!</p>

Still, I am a traditional breakfast lover. As we all know, traditional breakfast is probably the worst way to start off your day. So, how do you replace those cravings and desires with <strong>a raw food recipe </strong>that loves your body and your body can love? Try the raw versions! <a href="http://rawmazing.com/raw-food-recipes-healthy-food-recipes-healthy-food-raw-food/raw-strawberry-banana-crepes/" target="_blank">Strawberry Crepes</a> are a great alternative to the artery plugging traditional recipe. And this morning, I bring you Tropical Biscotti to enjoy with your morning beverage. With the addition of orange juice and zest, These are bursting with flavor!</p>

<p style="text-align: center;"><strong>Tropical Biscotti</strong></p>
<ul>

<div style="text-align: left;">1 1/2 C Almond Flour (I use the left overs from making almond milk)</div>
</li>
<li>
<div style="text-align: left;">1 C Ground Almonds (ground to a course meal)</div>
</li>
<li>
<div style="text-align: left;">1 C Dried Coconut (get this at the coop, unsweetened)</div>
</li>
<li>
<div style="text-align: left;">1/2 C Agave</div>
</li>
<li>
<div style="text-align: left;">1/2 C chopped Dried Apricots</div>
</li>
<li>
<div style="text-align: left;">1/2 C chopped Dried Pineapple</div>
</li>
<li>
<div style="text-align: left;">1/2 C Currants</div>
</li>
<li>
<div style="text-align: left;">1 large Orange (use all the juice and as much zest as you can)</div>
</li>
</ul>
<p style="text-align: left;">Hand chop or roughly chop in food processor, the apricots and the pineapple. Set aside. Place one cup of almonds in food processor and pulse until a coarse meal is created. Add almond flour and coconut. Pulse until just combined. Add agave and pulse until combined. At this point, remove from processor and place in bowl. Add orange juice and zest, combine by hand. Mix in chopped fruit and currants. Form into biscotti shaped loaves and dehydrate 8 hours. Cut into 3/4 inch slices and return to dehydrator and dehydrate until desired dryness is achieved. This is a moist dough so don&#8217;t be surprised if it takes a little longer to dehydrate. I like to leave a little moisture in and store in the refrigerator.</p>
