<p>I love eating a raw food diet. I especially love eating a raw food diet in the summer. Many of you know that I frequent our farmer&#8217;s markets. Not only do I get great prices on produce, but I get fresh, just picked veggies and fruit. I also get to support local growers and see produce that I normally don&#8217;t have access to year round.</p>
<p>Right now, lettuce is beautiful and plentiful. I have been buying a lot of romaine and eating a lot of salads, not to mention putting it in green drinks. I have to tell you, I have never been a big salad eater. I love my raw food diet but salads can seem like a lot of work, not only to prepare but to eat. With all of these beautiful greens around, I couldn&#8217;t resist and  have been making quite a few.</p>
<p>Here&#8217;s where it get&#8217;s interesting. As I eat more salads, I find that my cravings (normally for potato chips) have shifted. Now I am craving salads! It is quite amazing how you can retrain your taste-buds. As you eat healthier, your cravings for not-so-healthy food will eventually be replaced by cravings for healthy food!</p>
<p>I love mixing fruit with my greens. Don&#8217;t worry food combiners, greens are different than veggies. They are considered a leaf and closer to fruit than vegetables. Still, listen to your body as we are all different.</p>
<p>This is my current favorite salad. Mangoes, strawberries, jicama, and avocado, over romaine topped with a beautiful little blueberry vinaigrette and pumpkin seeds for that extra little boost. This is a hearty salad that works great for any meal.</p>

<p style="text-align: center;"><strong>Strawberry Mango Salad</strong></p>
<ul>
<li style="text-align: left;">1 head romaine lettuce</li>
<li style="text-align: left;">1 cup strawberries, sliced</li>
<li style="text-align: left;">1 cup mango, diced</li>
<li style="text-align: left;">1 cup jicama, diced</li>
<li style="text-align: left;">1 avocado, diced</li>
<li style="text-align: left;">1 cup pumpkin seeds</li>
</ul>
<p style="text-align: left;">1.Tear romaine and place on plate.</p>
<p style="text-align: left;">2. Mix together fruit and jicama. Place a handful on the lettuce bed.</p>
<p style="text-align: left;">3. Top with blueberry vinaigrette and pumpkin seeds</p>
<p style="text-align: left;">
<p style="text-align: left;">Blueberry Vinaigrette</p>
<ul style="text-align: left;">
<li>1 cup blueberries</li>
<li>1 tablespoon agave nectar (or sweetener of your choice)</li>
<li>2 tablespoons red wine vinegar</li>
<li>1/4 cup olive oil, cold pressed</li>
</ul>
<p style="text-align: left;">1. Combine all ingredients in a blender.</p>
<p style="text-align: left;">2. Pour over top of salad.</p>

All of the wonderful, healthy benefits that you get from eating this spice, let alone how tasty it is, inspires me. I have been craving easy, hearty raw food salads for lunch. Since I am up in the frozen tundra, I like to have a little more substance to my meals at this time of year. Starting with pumpkin seeds and sunflower seeds, I added some of my favorite veggies and came up with a satisfying, flavorful salad that is perfect for lunch or dinner. <p style="text-align: center;"><strong>Sunflower Pumpkin Turmeric Salad</strong></p>
<ul>
<li style="text-align: left;">3/4 C Pumpkin Seeds</li>
<li style="text-align: left;">3/4 C Sunflower Seeds</li>
<li style="text-align: left;">1/2 C Sweet Onion, chopped</li>
<li style="text-align: left;">1 C Celery, chopped</li>
<li style="text-align: left;">2 C Jicama, chopped</li>
<li style="text-align: left;">1 C Cucumber, chopped</li>
<li style="text-align: left;">1 C Raisins</li>
</ul>
<p style="text-align: left;">Dressing:</p>
<ul>
<li style="text-align: left;">1/2 C Brazil Nuts</li>
<li style="text-align: left;">2 Dates</li>
<li style="text-align: left;">2 t. Turmeric</li>
<li style="text-align: left;">1/4 C Water</li>
</ul>
<p style="text-align: left;">Soak pumpkin seeds and sunflower seeds in water for 6+ hours. (I normally do this the night before and place in the refrigerator.) Drain, rinse and place in food processor. Pulse about 5-10 times to coarsely chop the seeds. Remove from food processor and place in bowl. Add all other ingredients. Stir.</p>
<p style="text-align: left;">For dressing: Soak Brazil nuts and dates for at least 3 hours. Place Brazil nuts, dates, turmeric and water in vitamix. Blend until smooth. Combine well with salad mixture. If you want truly raw raisins, you will need to dehydrate grapes in your dehydrator.</p>

<li style="text-align: left;">1 Orange</li>
<li style="text-align: left;">1 C Pomegranate Seeds</li>
<li style="text-align: left;">1/2 C Pecans, chopped</li>
</ul>
<p style="text-align: left;">Tear romaine and place on plate in a circle. Remove the membranes from the orange slices and place on top of the romaine. Sprinkle with the pomegranate seeds and top with the pecan pieces. Pour dressing over top.</p>
<p style="text-align: center;"><strong>Orange Chia Seed Dressing</strong></p>
<ul>
<li style="text-align: left;">Juice from 1 Orange</li>
<li style="text-align: left;">1 T Agave</li>
<li style="text-align: left;">1 T Chia Seeds</li>
</ul>
<p style="text-align: left;">Whisk all ingredients and pour on top of salad.</p>

<p style="text-align: center;"><strong>Broccoli Raisin Sunflower Seed Salad</strong></p>
<p style="text-align: center;">Dressing:</p>
<ul>
<li style="text-align: left;">1 C Cashews, soaked at least 2 hours</li>
<li style="text-align: left;">Juice from 1 1/2 lemons</li>
<li style="text-align: left;">2 T Oil</li>
<li style="text-align: left;">1/4 C Water</li>
<li style="text-align: left;">1 shallot (2 T chopped)</li>
<li style="text-align: left;">1 clove garlic</li>
<li style="text-align: left;">2 T Agave</li>
<li style="text-align: left;">1/2 T Mustard Powder</li>
<li style="text-align: left;">Pinch Celtic Sea Salt</li>
</ul>
<p style="text-align: left;">Combine all ingredients in vitamix. Mix until silky smooth.</p>
<p style="text-align: center;">Salad:</p>
<ul>
<li style="text-align: left;">6 C Chopped Broccoli</li>
<li style="text-align: left;">1/2 Red Onion, medium, chopped</li>
<li style="text-align: left;">1 C Raisins</li>
<li style="text-align: left;">1 C Sunflower Seeds</li>
<li style="text-align: left;">Dressing</li>
</ul>
<p style="text-align: left;">Mix together broccoli, raisins, onion, raisins, and sunflower seeds. Top with dressing and combine until well coated.</p>

<p style="text-align: center;"><strong>Avocado Mango Broccoli Salad</strong></p>
<p>Years ago, there was a dessert that I would occasionally treat myself to.  It involved a brownie, a scoop of ice cream, a little cast iron skillet, hot fudge and a hot caramel sauce. The brownie and the caramel sauce were heated in the  oven until sizzling. It was topped with the ice cream and hot fudge. What made this dessert so special was the combination of hot and cold, and the opposing textures of smooth and crunchy. Why is this being discussed before a recipe for a salad? Opposing textures apply to all food. They creates a more interesting mouth feel and are a simple way to add complexity. This quick and easy salad uses opposing textures and flavors. The result is divine.</p>
<p>As we hit the &#8220;dog days&#8221; of August, salad for dinner is an appetizing alternative to heavier meals. A dinner salad requires some substance. Avocados and mangoes are a great flavor combination but very similar in texture. By adding broccoli and a red onion, you introduce the crunch, and a big nutritional boost . Broccoli provides vitamin A, C, folic acid, and a healthy dose of calcium, magnesium and iron. Broccoli also contains Indoles, which can inactivate harmful estrogens that promote tumor growth, Sulforaphane, which stimulates cells to make cancer fighting enzymes, and beta carotene which is another known cancer fighter. Broccoli contains 26% protein and a healthy dose of calcium.</p>

<p style="text-align: center;">2 ripe Mangoes</p>
<p style="text-align: center;">2 &#8211; 3 C chopped Broccoli</p>
<p style="text-align: center;">1/2 C chopped Red Onion</p>
<p style="text-align: center;">3/4 C Raisins</p>
<p style="text-align: center;">Salt and Pepper to taste</p>

<p style="text-align: center;">Combine all ingredients. Chill and serve!</p>

<p>Summer is the time to celebrate locally grown produce. Strawberries take on a whole new personality when they are grown close by. The berries, with their deep red flesh burst in your mouth with flavor. Evoking picnics by the lake, bare feet and sweet fragrant breezes, local strawberries are truly a summer indulgence.</p>
<p>As we move into August, salads can become the focal point of the meal. Heavier foods are no longer appealing as the long, warm days ask us for a refreshing meal. Strawberries are a wonderful addition to greens. Combined with a raw strawberry vinaigrette and almond brittle for an extra textural crunch, this salad will easily take center stage. <span style="color: #ff6600;">This recipe will require advanced prep time for the almond brittle.</span></p>

<p style="text-align: center;"><strong>Strawberry Vinaigrette<br />
</strong></p>
<ul>
<li>8 medium Strawberries</li>
<li>1 C Olive Oil</li>
<li>1/4 C Agave</li>
<li>2 Lemons, juiced</li>
</ul>
<p style="text-align: left;">Place all ingredients in Vitamix an blend until smooth and emulsified. Makes 1.2 Cups.</p>
<p style="text-align: center;"><strong>Almond Brittle</strong></p>
<ul>
<li>1 C almonds, soaked for at least 6 hours</li>
<li>1.5 T Cinnamon</li>
<li>1.5 T Ginger</li>
<li>pinch of Cayenne</li>
<li>2 &#8211; 3 T Maple Syrup*</li>
</ul>
<p style="text-align: center;"><strong> </strong></p>
<p style="text-align: left;">Drain almonds and pat dry. Place all ingredients in food processor. Process until well ground but some larger chunks still exist. If you need more moisture to hold together, add the extra maple syrup. Flatten out on a teflex sheet. Dehydrate for 8 hours or until brittle is very dry. Handle carefully.Carefully break into pieces.</p>

<ul>
<li>4 C Greens (of of choice)</li>
<li>Strawberry Vinaigrette</li>
<li>16 Strawberries &#8211; halved</li>
</ul>
<p style="text-align: center;"><strong>Assembly<br />
</strong></p>
<p style="text-align: left;">Place salad in center of plate. Surround with sliced strawberries. Drizzle vinaigrette on salad, top with crumbled almond brittle. Serves 4.</p>
<p style="text-align: left;">*Maple Syrup is not considered to be raw but is used by many raw chefs for textural reasons.</p>

</p><p>How wonderful it is when life throws something completely unexpected your way. Recently, I was shopping at a local cooking store. Having sent the sales person off to look for some small tart pans, I went back to being completely distracted by all the cooking gadgets surrounding me. &#8220;How are things?&#8221; Looking up I instantly realized  that the woman checking on my tart pans was a former bridesmaid of mine! A dear friend that I had lost contact with over the years. She didn&#8217;t recognize me either, and we both had a good laugh. Connections made, we were thrilled!</p>
<p>After much catching up, we started talking about raw food. Kim is a very good cook and was quite interested to learn about the health benefits and techniques used to make raw food. What followed was an entire day of raw food creating. She brought some of her favorite recipes and we converted them with fabulous results. For lunch, raw wilted spinach salad with pine nut tarragon hit the spot and she was pleased to see how easy it was to prepare. For one of her first raw meals, it went over well.</p>

<p style="text-align: center;">2 C Pine Nuts, soaked 1 hour</p>
<p style="text-align: center;">Juice from 1/2 Lemon</p>
<p style="text-align: center;">1 small clove garlic</p>
<p style="text-align: center;">1 small shallot</p>
<p style="text-align: center;">2 T Olive Oil</p>
<p style="text-align: center;">3 T Chopped Fresh Tarragon</p>
<p style="text-align: center;">pinch Celtic Sea Salt</p>
<p style="text-align: center;">Fresh Ground Pepper to taste</p>
<p style="text-align: center;">Place all ingredients in food processor and blend very well. Add chopped tarragon and pulse a few times to mix.</p>
<p style="text-align: center;"><strong>Salad</strong></p>
<p style="text-align: center;">5 C Raw Spinach</p>
<p style="text-align: center;">1 C Cherry tomatoes, halved</p>
<p style="text-align: center;">To make a &#8220;wilted&#8221; spinach, rub handfuls of spinach with your fingers until desired texture is achieved. Mix in Pine Nut Tarragon Sauce ( you won&#8217;t need all of the sauce, add by spoonful until you achieve your desired amount) and tomatoes, stir!</p>

I love to see what is new and what has just shown up that wasn&#8217;t there last week or even yesterday. On my latest trip, I found blood oranges. They taste similar to regular oranges but have a deep scarlet color. A couple of them came home in my bag and inspired this <strong>raw food recipe</strong> for strawberry salad. Once again, coconut and chia seeds were used to compliment the fruit and add a nutritious punch. This is a great salad to welcome in the warmer weather.</p>

<p style="text-align: center;"><strong>Strawberry Fruit Salad</strong></p>
<ul>
<li>1 C Strawberries, sliced</li>
<li>2 blood oranges, sectioned and halved</li>
<li>1 C Grapes</li>
<li>1 Banana</li>
<li>1/2 C Dried Apricots (sulpher free)</li>
<li>1/2 C Pecans, chopped</li>
<li>1/2 C Coconut (large, dried, unsweetened)</li>
<li>Mix all ingredients together.</li>

<li>Dressing:</li>
<li>1 lemon</li>
<li>1 Orange</li>
<li>1/4 C Chia Seeds</li>
<li>3 T Agave</li>
</ul>
<p style="text-align: center;">Juice orange and lemon. Add chia seeds and agave. Whisk together and pour over the fruit salad, mix in.</p>

<ul>
<li>1 Apple, chopped</li>
<li>1 Orange, chopped</li>
<li>1/4 C Blueberries</li>
<li>1/2 cup unsweetened crasins</li>
<li>1/2 C walnuts</li>
<li>1/2 C flaked coconut (unsweetened)</li>
</ul>
<p style="text-align: center;"><strong>Dressing</strong></p>
<ul>
<li>3 T Agave</li>
<li>Juice from 1 lemon</li>
<li>1 T Chia seeds</li>
</ul>
<p style="text-align: left;">Combine all salad ingredients. Whisk the lemon juice into the the agave, stir in the chia seeds and pour over salad. Mix to combine.</p>
