My farmer friend, <a href="http://www.rawmazing.com/articles/tomatoes/">Gray</a>, put in quite a few plants and they have been prolific. Inspired by an old, non-raw recipe for zucchini chocolate cake, I put together a raw food recipe for these little zucchini cacao bites. You, and your family will love them. They have a wonderful chocolate flavor and a moist, chewy texture. Feel free to add nuts!</p>

<p style="text-align: center;"><strong>Zucchini Cacao Cookies</strong></p>
<ul>
<li>3 cups grated zucchini</li>
<li>2 cups oat flour (raw)*</li>
<li>3/4 cup cacao</li>
<li>2 apples, cored and quartered</li>
<li>1/2 cup agave nectar</li>
<li>1/3 cup water</li>
<li>1/4 cup olive oil (cold pressed)</li>
</ul>
<p>1. Grate zucchini and set aside.</p>
<p>2. Mix together cacao and oat flour. Set aside.</p>
<p>3. Place apples in food processor with agave, water and olive oil. Process until smooth.</p>
<p>4. Stir together flour mixture and apple mixture.</p>
<p>5. Add to grated zucchini and stir until well combined.</p>
<p>6. Drop by spoonful onto non-stick dehydrator sheets. Flatten slightly. Dehydrate at 145 for 1/2 hour then reduce heat to 115 and dry for 4 hours. Remove from non-stick sheets and continue to dry until done. (aprox 4 more hours)</p>

<p>Until yesterday, I had never created a raw food recipe for kale chips. I couldn&#8217;t bring myself to take a veggie that I consider a bit bitter and try to turn it into something yummy. My friend, Joanna kept insisting that they were fab so I decided to give it a whirl. They turned out better than I could have hoped for. Which is great because Kale is incredibly healthy.</p>
<p>Kale, which is actually a form of cabbage, is loaded with fiber. One cup of kale provides you with twice your daily requirement of vitamin A, tons of vitamin C and has over a thousand times the RDA for vitamin K! Kale helps keep your body strong and also helps prevent damage from other forces that are constantly attacking our bodies.</p>

<p>Kale is full of fiber and phytonutrients. It produces sulforaphane which is a natural cancer-fighter that signals the liver to produce cancer fighting enzymes. Kale has high amounts of carotenoids that protect your eyes from ultraviolet light and other major issues. It even helps prevent cataracts.</p>

<p>There are many different kinds of kale out there. I wanted to know how each one tasted, and how it adapted to different recipes. I bought dinosaur kale, purple kale and green kale. Then I came up with three different recipes. So, we have 9 different outcomes.</p>
<p>For the first batch I simply used olive oil and salt. For the second batch, I added garlic and thyme. The third batch, one of my favorites, is a spicy combination of chipotle and smoked paprika combined with some brewers yeast, cashews and garlic. I think this hot version is my favorite.</p>
<p>The difference between the kale, after all was said and done was negligible. The dinosaur kale has a flatter shape and kept that through dehydration but the curly kale was fine and actually held a little more of the flavor mixture.The taste was pretty much the same for all.  You can go very easy on the olive oil. They dehydrate very quickly (4-5 hours) so, start them early in the day and you will have a great snack for later. My biggest challenge with these was to not eat them all before I got the picture taken! Make a lot as they dehydrate down quite a bit.</p>

<p style="text-align: center;"><strong>Kale Chips</strong></p>
<p>For all versions: wash and spin dry kale. Remove the tough spine and tear into bite size pieces, keeping in mind that they will shrink in size as they dehydrate.</p>
<p><strong>Version One: </strong></p>
<ul>
<li style="text-align: left;">3 T Olive Oil</li>
<li style="text-align: left;">1 tsp Sea Salt</li>
</ul>
<p>Combine olive oil and sea salt in large bowl. Stir in kale and coat. Place on dehydrator sheets and dehydrate at 115 for 4-6 hours or until crisp.</p>

<p>With food processor running, drop garlic in. It will mince. Add oil and thyme. Place mixture in bowl and follow directions above.</p>

<li style="text-align: left;">1 C Cashews, soaked</li>
<li style="text-align: left;">1/4 C Nutritional Yeast*</li>
<li style="text-align: left;">1/3 C water</li>
<li style="text-align: left;">2 T Olive Oil</li>
<li style="text-align: left;">1/2 tsp Smoked Paprika</li>
<li style="text-align: left;">1/4 tsp Chipotle (spice)</li>
<li style="text-align: left;">Pinch Sea Salt</li>
</ul>
<p>With processor running, drop in garlic and mince. Add the rest of the ingredients and process until smooth. Pour over kale chips in a bowl and massage until kale is coated. Dehydrate on screens at 115 for 4-6 hours or until crisp. *Nutritional yeast is not raw but used frequently in raw food recipes.</p>

They are tasty, super healthy and your kids will love them. No artificial colors, flavors or white stuff!</p>

<li style="text-align: left;">1 C Flour From Almond Pulp (you can substitute finely ground almonds)</li>
<li style="text-align: left;">1 C Raw Flaked Oats</li>
<li style="text-align: left;">1 T Agave (optional)</li>
<li style="text-align: left;">1 T Coconut Oil</li>
<li style="text-align: left;">5 large strawberries, sliced thin.</li>
</ul>
<p style="text-align: left;">Place banana, strawberries, agave and coconut oil (softened) in food processor and blend until smooth. Add almond flour and pulse until combined. Stir in Flaked Oats. Spread on nonstick a little less than 1/4&#8243; thick. Score, top each square with strawberry slice. Dehydrate at 145 for 30 minutes and then 115 for 2 hours. Move to mesh screens and dehydrate until dry but not hard. You want these to be a little soft. Refrigerate.</p>

That was a few years ago. Today, I decided to revisit the concept and wanting something that really reminded me of a cinnamon doughnut hole, threw together this quick version. Made with Brazil nuts for a base, some oat flour, flaked oats and coconut oil, a quick roll in cinnamon and sucanant gives a great tasting treat.</p>
<p>Brazil nuts are nutrient dense. They are full of protein, copper, niacin, magnesium, fiber, vitamin E          and selenium. Selenium is a powerful antioxidant that          works to neutralize dangerous free radicals. Sucanant is a unrefined sugar cane juice. It is made by heating, so not considered raw, but like maple syrup, is not processed.</p>

<p style="text-align: left;"><strong>Recipe</strong></p>
<ul>
<li>2 C Brazil Nuts</li>
<li>1/2 C Oat Flour (made from raw oats)</li>
<li>1 C Flaked Oats (raw)</li>
<li>1/3 C Coconut Oil</li>
<li>1/3 C Maple Syrup (not raw but used in raw food recipes)</li>
</ul>
<p>Chop Brazil nuts in food processor until fine. Combine dry ingredients in a bowl. Combine wet ingredients, mix together and then add to the wet ingredients. Stir. Squeeze into balls. Roll in sucanant cinnamon mixture and refrigerate.</p>
<p>Topping:</p>
<ul>
<li>1/3 C Sucanat (not raw but not processed, used in raw recipes)</li>
<li>1 1/2 t. Cinnamon</li>
</ul>
<p>Combine and put through blender. I use a coffee grinder for this to break up the grainy sucanant. You can skip this step and just combine the ingredients.</p>

<p>I love when information about food, raw food and the relationship between food and health is highlighted in mainstream media. I was watching &#8220;Good Morning America&#8221; on Friday. Dr. David Servan-Schreiber was talking about his new book, &#8220;Anti Cancer, A New Way of Life&#8221;. One of the first things that he mentioned was how important it was to make your diet comprised mostly of plants. We already know that here, but what caught my attention was his reference to Turmeric. I have hear that turmeric is a healthy addition to your diet but after listening to Dr. Servan-Schreiber, I was inspired to do some more research and develop a recipe that is based on this &#8220;super food&#8221;.</p>

<p>Turmeric has been called one of nature&#8217;s most powerful healers. It has great anti-inflammatory properties which can address symptoms of arthritis. It is anti-bacterial and anti-fungal. It is said to be a digestive aid that will settle the stomach. Turmeric contains a rich source of antioxidants that help fight against free radicals. It also is said to have anti-platelet properties that help protect against strokes and heart attacks. Studies have also shown that it has a beneficial effect on the liver.</p>
<p>Since I am in a major snacking mode, I decided to make a raw food turmeric dip. It is quick, easy and contains great healthy properties from the turmeric along with the other ingredients.</p>
<div class="recipe_box_green" style="text-align: center;"><strong>Turmeric Veggie Dip and Appetizer<br />
</strong></p>
<ul>
<li style="text-align: left;">1 C Soaked Cashews</li>
<li style="text-align: left;">1 C Young Coconut Flesh (1 &#8211; 2 young coconuts)</li>
<li style="text-align: left;">1/4 Coconut Water (from young coconut)</li>
<li style="text-align: left;">2 T Olive Oil</li>
<li style="text-align: left;">1 Clove Garlic</li>
<li style="text-align: left;">2 t.  Turmeric</li>
<li style="text-align: left;">1 t. Ginger</li>
<li style="text-align: left;">2 T Agave</li>
<li style="text-align: left;">1 Sliced Cucumber</li>
<li style="text-align: left;">Optional: other dipping veggies (celery, carrots, etc)</li>
</ul>
<p style="text-align: left;">Place all ingredients in food processor and process until smooth. This will take a bit and you will need to stop and scrape down the sides occasionally. Slice Cucumber and pipe the dip onto rounds. Alternatively, cut up veggies and use as a dip. (I sprinkled a little paprika on top for the photo.)</p>

<p>Need some quick raw food energy to get moving in the morning? Or a fast raw food afternoon pick me up? These bars are the perfect thing for that. Tasty, sweet and made with super healthy ingredients, they not only satisfy your hunger, they provide easily accessible, high nutrient energy to get or keep you going.</p>
<p>Almonds, pumpkin seeds and flax seeds make up the bulk of the recipe. With added goji berries, and cacao nibs, these bars really pack a punch.</p>
<p>We know about the benefits of almonds. They are high in protein, zinc and calcium. Almonds are also a great source of  vitamin E magnesium, calcium, potassium and iron. But did you know that pumpkin seeds are nutritional power houses? Considered a super food, Pumpkin seeds are full of magnesium, which keeps bones strong, promotes healthy heart  function and supports your nervous system&#8217;s function, B vitamins, and  are packed with protein! They are also a good source of iron, zinc and  fiber!</p>
<p>Golden flax seeds contain 27 cancer preventing substances while also giving you a good dose of omega 3&#8242;s, which are great in the battle against heart disease. Goji berries are high in protein, amino acids and are packed with antioxidants. Cacao nibs are partially ground cacao beans, which are the beans that chocolate comes from. Cacao is full of antioxidants and trace minerals and will give you a little pick me up, too!</p>

<p style="text-align: center;"><strong>Raw Goji Cacao Energy Bars</strong></p>
<ul>
<li style="text-align: left;">1 C Almonds, soaked</li>
<li style="text-align: left;">1 C Pumpkin Seeds, soaked</li>
<li style="text-align: left;">1 C Flax Seeds, soaked in 1 1/2 C water</li>
<li style="text-align: left;">1/3 C Agave</li>
<li style="text-align: left;">1 T Cinnamon</li>
<li style="text-align: left;">1/2 C Goji Berries</li>
<li style="text-align: left;">1/2 C Cacao Nibs</li>
</ul>
<p>1. Soak almonds, pumpkin seeds and flax seeds for at least 6 hours. Drain almonds and pumpkin seeds.</p>
<p>2. Place almonds and pumpkin seeds in food processor. Process until well ground but still chunky.</p>
<p>3. Add agave and cinnamon, pulse until well combined.</p>
<p>4. Remove from food processor and place large bowl. Add flax seeds, cacao nibs and goji berries, stir.</p>
<p>5. Press into a rectangle on non-stick dehydrator sheet. You want these to be 1/2&#8243; thick.</p>
<p>6. Dehydrate at 145 for 45 minutes. Reduce heat and dehydrate for 3 more hours.</p>
<p>7. Peel off dehydrator sheet, dehydrate for 2 more hours. At this point, you will remove them from the dehydrator, cut into bars, separate so there is a little space in between each bar and return to dehydrator for 2-3 more hours. You want them dry but not brittle. They should be a little soft.</p>
<p>8. Top with raw chocolate.</p>
<p><strong>Raw Chocolate:</strong></p>
<ul>
<li>1 C Raw Cacao Butter</li>
<li>1 t. Vanilla</li>
<li>3 T Coconut Oil</li>
<li>1/3 C Powdered Sucanat (finely ground in   coffee grinder)</li>
<li>2 T Agave</li>
<li>7 oz. Cacao Powder</li>
</ul>
<p>Melt cacao butter and coconut oil in   dehydrator or over hot water. In food processor, combine melted cacao   butter, coconut oil and vanilla. Remove 1/2 mixture and set aside. Add   1/2 cacao powder and combine. Add sucanant and combine. Add coconut   butter that was set aside and combine. Add remaining cacao powder, mix  well. It should be quite liquid at this point. It will harden as it  cools.</p>
<p>Makes two dozen, 1&#8243; x 3 bars</p>
