  • Pumpkin is high in beta-carotene. And beta-cartoene is your friend. It is a powerful antioxidant which means it helps get rid of damaging free radicals that damage your cells and DNA.
  • Pumpkin is also high in vitamins C and E.

    Local gooseneck pumpkins taste something like bubble gum when raw, rich. It made me buy Craisins (you can get them raw & organic and do your own “craizining” w/agave) for a slaw. I added some raisin, too, and dates, but sometimes I’m such a sweety [they tell me]. Cardamom & real paprika. Soak just a few crushed onion and garlic in acid for 20 minutes as background, just a tiny pinch of real French Dijon if they have some near you (for background depth). I been waiting all week to get more of this local wonderkin. Sunday is the grower’s only market in West Reading, PA. Luv yer stuff & I wish I had one of those p’kn’ cookies of yers in my hand right this very windy, chilly moment. Soon enuf, the snows will come . . .

    Just learned two new things – you can eat pumpkin raw, and pumpkin is a fruit!!
    Another one to add to the random-things-that-are-actually-fruits list (avocado anyone?!)

    Keep them pumpkin recipes coming, because I am definitely not complaining!
