You may have noticed that I have been a bit fixated with flat breads lately. I am on a creative raw food recipe bender. Every morning I get up and another idea pops into my head and I just have to try it! The breads are dense. They have a ton of nutrients but they are not always fun to eat alone. There are many nut spreads that could be used on them but in an effort to lighten things up, I decided to made a spread to go with the breads that would not only nourish but add a light touch with a lot of flavor.

Zucchini Cucumber Hummus
- 2 large zucchinis chopped (about 4 cups)
- 1/2 Cucumber, diced
- 1 C Tahini
- juice of one lemon
- 1 clove garlic
- pinch of salt
- pinch of pepper
Place all ingredients in food processor and process until well blended. This is great with veggies, or as a spread on flat bread. Makes 3 cups.
